I had an issue with "update_all" on one of my MiSTers. The script always terminated with a "No internet connection" error message. The problem was a "bad" ssl cert, caused by a linux update (the internet connection was fine). I saw a "curl" error 77 when running the downloaded script by "update_all"...

Each wifi adapter has it‘s own unique mac (hardware) address. There is no need to change it.
The mac address for eth0 is by default the same for every MiSTer. This is a problem if you have more than one MiSTer in your network. In this case, you can assign your own unique mac address.

I own a 21" PVM and a number of consumer CRTs. My favourites are 4:3 flat screen Trinitrons.
I use the PVM just for vertical games, since it's easy to tate.

I use a couple of shell scripts to set static (and dhcp) ip and mac address. Just change the variables in the script for your network setup and run it on the linux shell.
