Are you using HDMI output? If so, have you changed video_mode or vsync_adjust settings since you remember it being faster?

For me, my HDMI projector is slower to display with some configurations compared to others, and switching cores is one of the things that's impacted by this.

I definitely don't have that on the Genesis or S32X cores here on my Commodore 1702 monitor, nor my other monitors when using Y/C. If the text in the OSD Menu has any rainbowing effects there is something up, I'm not 100% sure, its really hard to tell on your video. If you're using YC or Svideo there will be no rainbowing or shimmering at all, on any cores. If you're using direct video and don't have the right adapter or have your settings set to YPbPr, the signal can get screwed up through the hdmi to vga converter but that's been the only time I've seen that problem. Great work so far! Got the latest Genesis YC core working over here, going from analog IO -> vga to component cable -> YC to commodore 1902a monitor. The monitor’s primary input is C64 style luma and chroma in a din connector, but I’m seeing a ton a shimmer/rainbows in Genesis games. The other cores I tried seemed a lot more reasonable. Modern revs of the Teensy can be both USB client and host, though I think you'd need to wire up the additional port yourself.

Interesting. I tried defining them in Arkanoid like that, and while it did let me map the buttons, it ignored them in game. I did try Centipede briefly but no matter what I did my player would drift to the right, and I also couldn't get buttons to work in game over there.

I’ve also been trying to figure out how to use what is available (trackball and buttons.) as noted I can successfully use trackball in Arkanoid, however even though the core lets me map the buttons, I can’t actually get them to do anything.

In r/MAME it sounds like folks have narrowed it down to being configured as a nonstandard mouse. It reports mouse buttons 22 through 30, with the trackball as mouse XY and spinner as scroll wheel.

If the TV can't do what you want it to do, is it not a bad TV for your use-case? I think it's more the point that a TV is often fulfilling many use cases for a household. I have a couple ones here for different purposes, but definitely appreciate how one might not have the space for multiple display. Others might not have the desire for a dedicate...
