I don't have experience with the Ultimate I/O board, but I can confirm that my Ultimarc Spintrack spinner works just fine with an iPac board. As well as the joystick and buttons. There may be some strangness in the robotron core as I have been unsuccessful in getting this to map properly to both sticks. I can play street fighter with no merge and have everything work perfectly but for some reason robotron specifically does not work as expected.

I too had issues with the iPac in my arcade cabinet with MiSTer. Changing to a newer firmware version that supported x-mode made things work much better. Holding Start and button 3 for 10 seconds will switch the iPac into x-Mode.

I can also confirm the EW-7822ULC, Edimax AC1200 works without any issues. I just needed to add the network name and password and everything just works as expected.
