To me PS1>PS2>PS3>PS4 looking at the amount of games that I enjoyed on them.

Xenogears is my absolute favorite.
Metal Gear Solid is probably second.
Driver 1 and 2 are up there as well.

My go to games on the PS1 was Blood Omen: Legacy of Kain and Medievil. I also really liked Bushido Blade and Tekken 3. While I am not much for racing games, I did always find the Grand Turismo games impressive. Especially that you got to tinker with the engine and tune the cars.

At one point I owned almost 200 PS1 games, but I sold all of them a few years ago. My favorite game could be MediEvil.

Resident Evil 1-3

I adored Bloodborne's world, combat, ambiance, and music. A fantastic game,
God of War also had a fantastic story and world.
The gameplay and story in Spider Man were both very enjoyable. Also love to play GTA with mods you can check it at cheatmaster.
And Red Dead 2, after playing RDR1 on my PS3, I was incredibly eager to play RDR2. I adored the story, the setting, and all of the characters.
Finally, Doom and Doom Eternal are two of the best first-person shooter games I've ever played, and I can't wait for the Eternal DLC.

MGS is my favorite game of all time, so that is obviously #1.

English Translation of Policenauts is highly recommended.

All the Resident Evil Games are classics.

Wipeout XL and Wipeout 3 SE are great racing games to check out if you want something a bit different than Gran Turismo and Ridge Racer games.

I've been playing the crap out of Castlevania: Symphony of the Night recently.

I (still) own an original, PAL black box copy, but never really got into it back in the day.

Its a great game.

Back in the day I played a lot of Pocket Fighter and SFA3 on my PS1.... Nowadays I can just play the arcade versions though.

SoTN was amazing back then and still holds up. Worth playing then continue to the GBA castlevanias after...

For me, there is only one game I love, on PSX.

All other games, looks and plays horrible from todays perspective, and without rose tinted glasses.
This early 3d is pure garbage and sadness inducing stuff.

For me, Populous:The Beginning. It's the game I've had running on the most hardware as well, playing the PS1 version on PS1 (obviously!), PS3, Raspberry Pi, Windows and, now, MiSTer.

Highly questionable. Games like Chrono Cross, FF9 or Ridge Racer 4 still look and play just fine today, and I'd rather play them with their original graphics rather than some questionable upscaling/remastered process.
